A Brief History of Leftovers

Most long established cultures have recipes based on the need to use up leftovers, borne from times when wasting food was unthinkable. This does not mean that the results were unpalatable and the more successful dishes have gone on to become meals of choice rather than second rate fare. These dishes often became part of folk lore and tradition, a living link to a more limited lifestyle. Other recipes might be more recent but their roots remain the same, the necessity to use up valuable resources. As cultures travelled the world they took their culinary traditions with them but these were often adapted to suit the availability of local produce.
